Twice Baked Sweet Potato Pepper Cup Breakfast

Who doesn't love potato skins at a dive bar watching your NFL team of choice any given Sunday?


Let's convert that to breakfast/brunch while checking your morning emails while working from home during the "New Normal".


Below is a guideline you can adjust whatever suits your style or your mood for the day! They taste great the next day!

INGREDIENTS


Ingredients for 3 servings:

  • 2 raw small/medium sweet potato (~400g)

  • 3 eggs

  • 3 slices turkey leg bacon

  • 3 Bell Pepper

Seasonings:

  • fresh rosemary

  • pepper

  • sea salt



STEPS

  • Set oven to 400F.

  • Bake sweet potatoes in the oven for about 30 minutes until they are soft, yet still a little firm.  If they are too soft, we will not be able to use them.

TIP: if the sweet potatoes are too thin or not thick enough, I advise baking two sweet potatoes.


  • Take the potatoes and peel the skin and mash them in a bowl.

  • Cut the tops and clean the inside of the bell peppers.

  • If you use bacon, wrap one slice of turkey bacon around the inside hole in the bell pepper. If it is easier, you can slice the bacon into individual pieces and then wrap around the inside of the bell pepper.

  • Crack an egg into a bowl. First pour the egg white in the hole, then add the egg yolk.

  • If you are worried about overcooking the egg yolk in the oven or undercooking the egg white, then only add in the egg white. Bake the sweet potato with only the egg white and when the egg white is nearly finished, about 90%, remove it from the oven, add the egg yolk, then place it back in the oven to finish baking.

  •  Bake these in the oven for 25 minutes at 400F, or until all the egg white has been cooked.



 

Can you always control the outcome? No. But you can always control your response. You either pack it up and close down, or you respond with a plan - with an attempt at getting better.

Humans are known for being adaptive. We are gifted with a very detail orientated thought process. Spend some time in thought and ask yourself what can I do to protect myself from failure? We learn from failure and we adapt; then the success will follow.
